Tomato Tortellini Soup Recipe

Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
  • 2 cups vegetable broth
  • 2 cups 2% milk
  • 2 cups half-and-half cream
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 cup shredded Parmesan cheese
  • Additional shredded Parmesan cheese, optional

Directions

  • Cook tortellini according to package directions.
  • Meanwhile, in a Dutch oven, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired. Yield: 10 servings (2-1/2 quarts).

Nutritional Facts 1 cup (calculated without additional cheese) equals 245 calories, 11 g fat (6 g saturated fat), 42 mg cholesterol, 756 mg sodium, 27 g carbohydrate, 2 g fiber, 10 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

I used Trader Joe's vegetable broth which gave it a weird flavor I think. So next time I'd use chicken broth. I skipped tomatoes & used 1/4 cup half and half with nearly 8 oz. cream, & added 1/2 tsp. seasoned salt. Also used Campbell's 100% natural tomato with basil soup. No corn syrup for us!

The flavor was good, but it was way too thin for our liking. I do think doubling the tortellini as other reviewers said would help, but I won't be making it again.

My family loved this soup!! I did change a couple things, as I read the reviews and some made sense, for my family. I used diced tomatos instead of sun dried. I bought a larger package of tortellini.I used chicken broth and added some cooked chicken that I had leftovers. I aslo sauteed garlic and onions, but followed everyhthing else- result: great soup. Definitely a keeper.

This soup was wonderful. I think I would only change one thing, and that would be to blend the ingredients together with a hand blender before I add the tortellini. But it tasted wonderful and I can't wait to eat the leftovers!

Hubby and I liked it, kids wouldn't even try it. They are so picky. I chopped the sun dried tomatoes in my quick chopper and I think that worked great.

Delicious overall and the broth is to die for. I substituted canned diced tomatoes for the sun-dried and used a bag of frozen tortellini instead of smaller refrigerated package to give it some additional heft. Served with sliced Italian bread. Will be adding this to my recipe rotation.

Some great modifications if you're interested in making this a little more hearty.

I used 20 oz. of cheese tortellini and cooked and diced 2 chicken breasts (1lb) seasoned with Mrs. Dash. Instead of 2 cups ½ and ½, I used 1 C heavy whipping cream, 4 oz. lite sour cream, and 4 oz. ricotta cheese. Instead of garlic and onion powder, I sautéed ½ white onion and 3 cloves of minced garlic in EVOO. I also added 2 chopped fresh tomatoes and sautéed mushrooms as garnish (sautéed in same pan as onion and garlic). I didn't add any salt but added plenty of fresh ground pepper. Didn't need the PARM cheese with the ricotta. Lastly, I used lots of chopped fresh basil and basil leaves as garnish.

This soup was so delicious!

I added 20 oz of tortellini, a 14.5 oz can of white kidney beans and a 14.5 oz can of roasted garlic diced tomatoes.

Made this for our annual fund-raiser and it was a hit. I gave it 4 stars since I made a couple of changes per previous reviews. I used chicken broth instea of vegetable and 2/3 cup of diced tomatoes. Served it out of a slow cooker and brought only 1 bowl home so I could eat some! Very popular and some people went back for seconds. Will definitely make this again.

I made this soup for an annual soup party my friend hosts and I won first prize! My additions to the recipe were a pound of mild Italian sausage, a can of Tomato Bisque and a half package of frozen spinach. I also used fire-roasted diced tomatoes instead of sun-dried and a 19 oz. bag of tortellini. It was a huge hit and everyone loved it! I will definitely be making this again.

This was great! There are only 2 of us so I split the liquid in half, and added a can of white kidney beans for some protein. I also used Tomato Bisque soup and fresh tomatoes instead of sun-dried. Wonderful meal and I will make it again. Thanks for the recipe!

This is a great soup for a cold evening. I agree that it could use more torellini, but the flavor is great and it is easy to make. It is just as good as left overs too. I also added some roasted red peppers to add more flavor.

Just made this following the directions and proportions as specified, only using fresh basil instead of dried. I thought it needed more tomato soup. I also didn't care much for the texture of the sun-dried tomatoes even though I chopped them really fine. I will make again without the sun-dried tomatoes and with twice the tomato soup.

I've made this recipe several times and my whole family loves it. I doubled the tortellini but left the rest of the recipe alone. It is creamy, savory and just delicious. Served with french bread it makes a great and simple dinner.

I am making this recipe a 2nd time tonight - which means it gets added to my "favorites" book. Like other reviewers, I replaced the sun dried tomatoes with canned diced tomatoes. Very yummy and unique soup and its just as good reheated as leftovers.

This is a yummy tomato soup that has chunks of tomatoes, and big cheese tortellini in it. Not too think, but very warming. Easy too! We'll be making this one again.

I used a can of diced tomatos (drained) instead of the sundried and chicken broth instead of vegetable broth. Also added a can of tomato sauce because I thought it needed more tomato flavoring. Excellent!

this was soo good.. i used regular sundried tomatos because i thought the oil packed ones where expensive and used a whole package of frozen tortellini. to the people who think its a lot of liquid... its a soup not a stew or sauce what did u think it was going to be like...next time i am going to add some frozen spinach

I liked this and it was certainly easy to make. I will add more Italian seasoning or something the next time I make it because I like things a little more spicy. But it was definitely a good start.

I made this yesterday for the first time, and both my husband and I loved it! Next time I will probably try using extra tortellini, but the soup itself is outstanding, even without the tortellini. Great recipe and one I will be keeping for years!

I would have given it 2 stars because this did not impress me at all. I felt there was way too much milk/cream and I didn't use as much as the recipe calls for. The tomato soup-iness of it clashed with the tortellini. I would suggest using less milk and a different pasta like macaroni or something without filling.

I gave it a 3 because it went over well with my sister and her husband. She loved it and demanded the recipe--one because she thought it was delicious and two because it was quick and easy to make. She, too, recommended less milk/cream.

This soup is so quick and delicious! I picked up Light Cream instead of Half and half so used that. Also....put in FRESH basil because I'm not a fan of dried spices. AWESOME!  I would in the future double the tortellini because it does make alot of liquid.

All I can say is "Oh My GOD".... This has got to be the best Tomato Soup ever made. I was having a luncheon and didn't know that one person didn't like tomato soup. She actually went home with the recipe in hand to make it for her mother..... This is a KEEPER........

I used twice the tortellini called for and it was still way too much liquid. It also did not have much flavor. It could possibly be saved by halving the liquid and adding a whopping spoon of pesto, but I won't make it again.

We made this soup today and it was amazing! It tasted like restraunt quality soup and it was very quick to make. We served garlic bread with it and it was hearty enough to make a mea.

I made this just the other day because I happened to see it online, and it was delicious! I didn't have any vegetable broth on hand, so I used chicken broth, but it was still wonderful! I also used more tortellini than 9 oz. and there was still plenty of soup around the pasta.

This was good, though I made a few changes. I didn't add the dried tomatoes, because I knew my kids would not like them. I threw in a half bag of frozen broccoli instead. I didn't have the cheese to put in, but I really think that would have made it even better. I added some extra onion and garlic powder, and extra salt. Pepper would have been good, too. Yum!

This soup is now one of my all time favorites! Both my husband and I LOVED the flavor of this soup! I forgot to buy sun-dried tomatoes so I chopped up cooked bacon instead - nice subsitute :) I used the sprinkle parm cheese instead of the shredded so I added a little more to help thicken the soup.

So delicious and pretty simply to make. Literally takes about ten minutes to put together- and the flavor is so delicious! This is one my husband saw in the magazine and requested that I make it. It didn't disappoint, and is in rotation now.

Absolutely delicious!! Wouldn't change a thing. Some reviews said add more tortellini, but it's a preference thing, because the soup itself is so fabulous that you could eat it even without the tortellini!

We really enjoyed this soup. Made it a few times and my daughters friend has ask for the receipe and made it as well. Did not use sun dried tomatoes but stewed tomatoes instead.

This was a great vegetarian option! My fiance complains when I make meals without meat and he didn't even notice with this soup! I added more garlic powder (to taste) which made it very flavorful. I also added more tortellini to the soup. I served it with some french bread and dipping it in the soup was delicious!

I've gotten some great recipes from this magazine, but this one wasn't one of my favorites. I thought it was a little bland tasting and it definitely needed something else. I think adding chicken is a great idea and I wish I would have done that. I won't be making this recipe again.

My husband absolutely loves this soup and he doesn't like tomato soup! Even my small children(3,1) had seconds!! I added chicken for a protein boost and made fresh rolls-the perfect dinner for our damp day!!

This soup was excellent. It is easy to make and doesn't take too much time. I have a hungry household to feed and this makes for a great meal when paired with a salad and bread sticks.

The whole fam loved this and is was SO simple and easy! I, too would increase the tortellini next time. My package was about 19 oz and I wished I would have put it all in. Next time! The kids loved this too and ate it up. We had it with Parmesan rolls. I didn't have any 2% milk on hand, so I used a can of evaporated 2% milk and filled up the rest of my 2-cup measure with fresh 1% milk. So good!!

In an effort to make this with a tad less fat, I substituted the heavy cream for fat-free evaporated milk, the 2% milk for skim, and I rinsed the oil from the sundried tomatos first. It was still wonderful and my husband loved it!

This was very good. I didn't have half and half so I used milnot instead. I think it would be just as good if you lighten it up with skim milk. I plan to try that next time.

Very good, my husband and i agree it's a keeper. I added twice as much tortellini as called for fresh chopped onion and fresh minced garlic. Sauteed onion, sun dried tomatoes and garlic together then added balance of the ingredients with 1/4 tsp of herbs de provence, also used 1/4 cup of mexican cheese blend, and extra parm. Will add to my recipe book. Thanks for the recipe.

I made this soup last night for the first time and it was a total hit! My very picky 7 year old said it was the best soup ever. Also, I used 1% milk and fat free half & half. It was still very creamy and smooth. I added some pepper to give it a little kick and it was perfect! Cant wait to make this quick, easy and delicious soup again.

I added a pound of lean cooked ground beef to the soup to make it a little heartier and used a 12 ounce package of mini cheese ravioli (in error) instead of the tortellini, but otherwise kept the recipe the same. I paired it with a loaf of homemade bread. Everyone loved it and I will definitely put this in my "keep" recipe file!

This soup was excellent, a great addition to plain tomato soup but simple enough to be just as quick. Next time I'll double the amount of tortellini, but that's just my personal preference.

Great and easy soup recipe. My husband and teenagers loved it. I gave it a south western twist and added corn and a little hot sauce. Also swerved with cheesy jalepeno bread.

I made this soup last night for company. It is very easy to do and the taste is absolutely beautiful and velvety. I made a double batch which was super easy to do. My company raved about it again and again. I followed the recipe as is to give it a shot. It's very good as is, but I think I might increase the seasonings just a little as I tend to like a little more boost. I plan to add this recipe to my specials book as it is so wonderful. Paired it up with small sub sandwiches, a chocolate raspberry petite cake and a great bottle of Cabernet Shiraz(not heavy at all. the flavors all complemented well). Wow it was a supreme hit.
