Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 2 medium tomatoes, seeded and chopped
  • 1/3 cup half-and-half cream
  • 1 small onion, chopped
  • 1/2 teaspoon garlic salt
  • Assorted crackers

Directions

  • In a bowl, beat cream cheese until fluffy. Stir in the spinach, Monterey Jack cheese, tomatoes, cream, onion and garlic salt. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Serve with crackers. Yield: 4 cups.

Nutrition Facts: 1 serving (2 tablespoons) equals 46 calories, 4 g fat (2 g saturated fat), 12 mg cholesterol, 77 mg sodium, 1 g carbohydrate, trace fiber, 2 g protein.
