Tomato Corn Salad Recipe

Ingredients

  • 3 large tomatoes, chopped
  • 1 small red onion, halved and thinly sliced
  • 1/3 cup chopped green onions
  • 1/4 cup balsamic vinegar
  • 3 tablespoons minced fresh basil
  • 1 tablespoon minced fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups fresh corn (about 9 ears of corn)
  • 2 tablespoons olive oil
  • 3 garlic cloves, peeled and thinly sliced
  • 1 tablespoon Dijon mustard

Directions

  • In a large bowl, combine the first eight ingredients. In a large skillet, saute corn in oil until tender. Add garlic; cook 1 minute longer. Stir in mustard. Add to vegetable mixture; toss to coat. Serve with a slotted spoon. Yield: 7 servings.

Nutritional Facts 3/4 cup equals 140 calories, 5 g fat (1 g saturated fat), 0 cholesterol, 410 mg sodium, 23 g carbohydrate, 4 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1 vegetable, 1/2 fat.

I don't have access to fresh herbs unless I buy them at the store, do you think it would taste just as good using the spiced herbs? Really want to try this...sounds very light and refreshing. Thanks

For meme: I am also diabetic. According to my nutritionist, corn is fine to eat, you just need to count it as a carb and not as a veggie. So I have corn instead of a bread. Enjoy!!

This recipe sounds great but I am a diabetic and can't eat corn because it turns to sugar.

Stargazerss..... did you add enough of the cilantro?  I also added some fresh lemon juice.  I know there are a LOT of diabetic "theroys", but my Mother in law.....who was more of a MOM to me than my own, was diabetic, among other problems......she would eat this and her Dr. said it was PERFECT!  No added sugar, high in fiber and also had the carbs that she needed!  I don't know your specific diet regulations, but for a diabetic with normal weight (as in NOT on a diet), this is a great salad OR lunch meal!! God bless her.......she lived WAY beyond what she was told in her 50's!!!  She passed at a wonderful, YOUNG age of 88 yrs young!!  Unfortunately, she had a stroke.  One of her "other" major health issues. 

I wish you best of health and ALWAYS do what YOUR Doctor has prescribed for YOU!!!!
