Three-Cheese Potatoes Recipe
  • Prep: 15 min. Grill: 35 min.

Ingredients

  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced chives
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup crumbled cooked bacon
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Directions

  • In a large bowl, combine the first six ingredients. Transfer to a double thickness of greased heavy-duty foil (about 18 in. square). Dot with butter.
  • Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender.
  • Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape. Yield: 4-6 servings.

Nutritional Facts 1 serving (1/2 cup) equals 293 calories, 11 g fat (7 g saturated fat), 36 mg cholesterol, 614 mg sodium, 36 g carbohydrate, 3 g fiber, 13 g protein.

I saw another recipe that used the slow cooker instead of a grill, so I mistakenly used this method. I would probably make it in the oven (or grill) instead of the slow cooker next time. It just had that "slow cooker taste" that my husband and I don't care for.

I followed the recipe exactly, and even with "slow cooker taste" these were really good.

Love these! I do use the oven rather than a grill. Making it again tonight to go with oven baked chicken. I followed the suggestion of others and pre-cooked my potatoes and onion in the microwave for a few minutes first. Nice thing about these is you can add or delete just about everything (except the potatoes ) and it still comes out delicious!

when we grill, I like to throw as many foil-packet side dishes on as possible - this one cooks up while your burgers are browning. Such a good taste, no leftovers!!

We loved these potatoes! I did microwave the potatoes and onion before putting them in the foil packet. We had two cheese potatoes as I only had parmesan and Monterey Jack cheeses and it was still great. On our grill they started to get too brown on the bottom so I trippled up a piece of heavy duty foil to set the packet on. Perfect flavors!

My family and I have been making this recipe for years and years...never thought to enter it into Taste of Home!!! We add bell peppers for a different taste.

These are some of the best potatoes I've had. I will absolutely be making these again and again. I pre-cooked my potatoes and onion in the microwave a bit before grilling to reduce the time a bit and it worked out perfect.

We will most definitely be makin these again! We doubled the recipe and substituted the Parmesean cheese for another that we had in the house and it was still great! Had a great savory smokey flavor that we now love!

This is now my favorite potato recipe. My family loved, loved, loved them. We had made a similar recipe before, but this one has a perfect blend of flavors. I am in the process of printing multiple copies so that I can never lose the recipe. If I had a safe, this recipe would go in it!

These are really good and a nice side dish for summer barbecues. To speed up cooking, I put the diced potatoes in the microwave for a few minutes.

This is now my favorite grilled potatoes recipe. Very yummy. I usually make double the recipe/packets of it otherwise there is not enough for everyone.
