Tender Italian Sugar Cookies Recipe

Ingredients

  • 3/4 cup shortening
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • ICING:
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract
  • 2-1/2 cups confectioners' sugar
  • Food coloring and colored sugar, optional

Directions

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.
  • Shape dough into 1-1/2-in. balls. Place 1 in. apart on ungreased baking sheets. Bake at 400° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.
  • For icing, in a small bowl, combine the milk, butter, vanilla and confectioners' sugar until smooth. Tint with food coloring if desired. Dip the tops of cookies in icing; allow excess to drip off. Sprinkle with colored sugar if desired. Place on waxed paper; let stand until set. Yield: 3 dozen.

Also, I did not find that I needed more powdered sugar in my icing. It was quite thick actually, and at one point I thought about adding a tad of milk to thin it up a bit.

This is my absolute favorite of all the new recipes I made this year. I'm sure it will become one that I make each year. Which is funny because this is the recipe that I wasn't sure I would like, haha! The cookies are so tender, they literally melt in your mouth, and frosting them is so easy, because you just dip the tops in the frosting and sprinkle on the sugars! I made mine the same colors and the picture and they look so elegant, I can't wait to share them with my family this Christmas! (If I don't eat them all first!)

Best Italian cookie I have tasted in years. Very tender and exceptionally easy to make. One batch is NOT enought so save yourself time and double it the first time.

These are really yummy! The only thing that needs to be adjusted is the amount of powdered sugar for the icing. It took more than what it calls for.

These look really pretty on a cookie tray for Christmas!
