“My cousin is of Mexican heritage, and I’ve watched her make these crunchy burritos for years,” writes Debi Lane from Chattanooga, Tennessee. “The very first time I made them for my own family, they became an instant favorite meal. They’re even better warmed up the next day in the microwave,” she adds. “A great leftover to snack on!” TIP: “Serve with Spanish rice or just chips and salsa,” Debi suggests.

Ingredients

  • 1 pound ground beef
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1 envelope taco seasoning
  • 1 can (16 ounces) refried beans
  • 6 flour tortillas (12 inches), warmed
  • 1 cup (4 ounces) shredded Colby-Monterey Jack cheese
  • 4 teaspoons canola oil
  • Sour cream and salsa

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. In a small saucepan, cook refried beans over medium-low heat for 2-3 minutes or until heated through.
  • Spoon about 1/3 cup of beans off-center on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortilla over filling and roll up.
  • In a large skillet over medium-high heat, brown burritos in oil on all sides. Serve with sour cream and salsa. Yield: 6 servings.

We all enjoyed these burritos. I added a little chicken-flavored rice from last nights dinner and I think it was a good addition.

I made this last night and they were great - didn't fry the burritos in the oil though (cuts down the calories and I don't like the mess frying makes). I added a spoonful of guacamola on top of the sour cream.

I made something like this for years when my children were little. Sometimes with beans & cheese no meat for after school snacks--and believe it or not they get CRUNCHY in the TOASTER OVEN without the oil for a healthier version! I do that now for my hubby and I, kids are grown. Mmmm. love it!

yes...I have a "baked chimichangas" recipe that is similar and they turn out great!

12 to 14 minutes or until golden brown...475*  that was from the original recipe..I set mine to 450*.  They also spray the tops with butter flavored cooking spray..I don't.

Technically, when a burrito is fried, it's a "chimichanga".
