“My cousin is of Mexican heritage, and I’ve watched her make these crunchy burritos for years,” writes Debi Lane from Chattanooga, Tennessee. “The very first time I made them for my own family, they became an instant favorite meal. They’re even better warmed up the next day in the microwave,” she adds. “A great leftover to snack on!” TIP: “Serve with Spanish rice or just chips and salsa,” Debi suggests.

Ingredients

  • 1 pound ground beef
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 1 envelope taco seasoning
  • 1 can (16 ounces) refried beans
  • 6 flour tortillas (12 inches), warmed
  • 1 cup (4 ounces) shredded Colby-Monterey Jack cheese
  • 4 teaspoons canola oil
  • Sour cream and salsa

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. In a small saucepan, cook refried beans over medium-low heat for 2-3 minutes or until heated through.
  • Spoon about 1/3 cup of beans off-center on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortilla over filling and roll up.
  • In a large skillet over medium-high heat, brown burritos in oil on all sides. Serve with sour cream and salsa. Yield: 6 servings.

This recipe was a HUGE hit in my household, that has extremely picky eaters. I took the suggestions of some other reviewers and popped them in the oven versus stove top because I wanted to cut back on the frying. Now my husband can't even go to the "Mexican" places around here because these were sooo good!!! Thank you!!!!

These were very good. My husband said they were as good as the ones at our favorite Mexican restaurant. I agree with the others, the heat was too high, they browned very quickly. Once I turned it down, they were fine. Will definitely make again.

These are delicious whether you call them burritos or chimichangas. I topped them with salsa verde and sour cream with a Mexican rice on the side. The only issue that I had was med-high turned out to be way too hot and I burned the first two. I lowered the heat to med and the rest were perfect. I will definitely be making again.

I substituted the ground beef for ground turkey, and used fat-free refried beans. Very simple recipe and very delicious. Goes great with a side of yellow rice.

These were very very good. I agree with another poster these are NOT burritos. Fried they are Chimichangas. I also think using smaller tortillas would be a better idea for a serving size. I also made the Mexican Chicken Meatballs to go with it. Salsa, sour cream and guacamole rounded out the dish with rice on the side. Will certainly make again and again.

My husband and I love these! They're very easy to make and you can substitute different kinds of meat for the ground beef. We often make them with shredded or ground chicken and it's wonderful. These also freeze pretty well too. I always have to keep my eye on the freezer to make sure I get leftovers before my husband eats them all!

Have made this recipe many times. Making it tonight, in the oven 450 for 15 min. I also add spanish rice to the filling. Makes it a little healthier as you don't add as much meat.

The burritos were scrumptious! It was such a nice change from regular tacos and burritos. I really liked that I could make a beef and bean burrito for my husband and just a bean burrito for myself. You can do different variations without any hassle. Love it!

I made them using canned shredded chicken instead of ground beef. Much healthier and such a great taste.

I have made there a couple of times... Everytime I'm amazed how good they are... I did use 8" tortillas last time and like the portion size better then the 10"...

I made these for my grandson and me and we bothed loved them! I used cooking spray instead of the oil the second time I made them and it made no difference to the taste. They were still delicious!!

I made these the other day, with some mexican rice and extra refried beans. My whole family loved them. I browned them in less oil than called for, and topped them with onion, shredded lettuce,cheese,sour cream and salsa. They were a huge hit!

I made this last night and they were great - didn't fry the burritos in the oil though (cuts down the calories and I don't like the mess frying makes). I added a spoonful of guacamola on top of the sour cream.

I made something like this for years when my children were little. Sometimes with beans & cheese no meat for after school snacks--and believe it or not they get CRUNCHY in the TOASTER OVEN without the oil for a healthier version! I do that now for my hubby and I, kids are grown. Mmmm. love it!

yes...I have a "baked chimichangas" recipe that is similar and they turn out great!

12 to 14 minutes or until golden brown...475*  that was from the original recipe..I set mine to 450*.  They also spray the tops with butter flavored cooking spray..I don't.
