Taco Quiche Recipe

Ingredients

  • 2 pounds ground beef
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 2 envelopes taco seasoning
  • 4 eggs
  • 3/4 cup 2% milk
  • 1-1/4 cups biscuit/baking mix
  • Dash pepper
  • 1/2 cup sour cream
  • 2 to 3 cups chopped lettuce
  • 3/4 cup chopped tomato
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped green onions
  • 2 cups (8 ounces) shredded cheddar cheese

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add taco seasoning and prepare according to the package directions. Spoon meat into a greased 13-in. x 9-in. baking dish.
  • In a large bowl, beat eggs and milk. Stir in biscuit mix and pepper. Pour over meat.
  • Bake, uncovered, at 400° for 20-25 minutes or until a thermometer reads 160°. Cool for 5-10 minutes.
  • Spread sour cream over the top; sprinkle with lettuce, tomato, green pepper, onions and cheese. Yield: 8 servings.

Nutritional Facts 1 serving (1 each) equals 472 calories, 27 g fat (14 g saturated fat), 205 mg cholesterol, 1,360 mg sodium, 24 g carbohydrate, 1 g fiber, 32 g protein.

I tried a half batch, and really liked this one. I did make 2 changes-I added about 3 Tbsp cornmeal to the batter, and I also cooked 2-3 Tbsp onion with the taco meat. I will be making this one again, maybe try ground chicken or turkey next!

Fast meal and easy to adapt. I mix cooked meat with black beans, seasonings and salsa. I put the egg mixture over top and then cook. Yummy!

Was not impressed by the heaviness of the biscuit mix. It seemed to weigh everything down. I did leave the toppings off let everyone top their own which seemed to work well. I also sprinkled some extra cheese on the top and let it bake an extra minute and let the cheese melt into it.

This was excellent! A great alternative to the usually messy tacos. Very easy to put together. I actually cut out portions and let everyone add their own veggies and sauces so for picky eaters, it was easy to omit ingredients for them but keep them for myself.

This is my favorite Taste of Home recipe! I usually add drained Ro-Tel diced tomatoes and chilis to the meat. Once in a while I toss drained chili beans in too. I generally add a bit more (okay...a lot more) sour cream on top and replace the peppers and onion topping with sliced black olives. This is a very versatile and simple recipe...pretty hard to mess it up. And no matter how you choose to make it, you'll love it.

I love making Quiches. I was excited to try this one because I never would have thought of this combination, but it was EXCELLENT and can't wait to make it again. Also because it is made in a 13x9 pan it has plenty of leftovers. A nice meal if you are on a budget.

I left out the Green Pepper and Green Onion, added Taco Hot Sauce. Everyone loved it...sooo easy to prepare.
