Taco Macaroni Recipe

Ingredients

  • 1 package (16 ounces) elbow macaroni
  • 1 pound ground beef
    XKick-up the flavor

    With Johnsonville Italian Sausage.

  • 3/4 cup chopped onion
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 can (8 ounces) tomato sauce
  • 1 envelope taco seasoning
  • Shredded cheddar cheese

Directions

  • Cook macaroni according to package directions. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain.
  • Stir in the tomatoes, soup, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened.
  • Drain macaroni; stir into meat mixture and heat through. Sprinkle with cheese. Yield: 6 servings.

Awesome recipe! I used hot rotel, and tomato sauce, bulk taco seasoning (so I can add to taste). Used boxed Mac n cheese, and added some cheddar, topped with sour cream. Big hit with the family.

Like some of the other reviewers, I thought this needed a bit more Mexican flavor so I added some chili powder and cumin on top of the seasoning mix... Some other good additions would be corn, black olives, scallions/green onions.... Maybe even pepper jack cheese instead of cheddar... It's a good recipe to play with...

This makes way more than 6 servings!!! My husband and I will be eating these leftovers for a week. This was good. However, I think the recipe calls for way too much macaroni and not enough taco seasoning. I didn't have tomato soup or sauce, so I used a 6oz can of tomato paste mixed with 6 oz of water and it was just fine. Next time I make this, I will reduce the amount of macaroni and maybe use 1 and 1/2 packets of taco seasoning.

I also am not renewing my subscription. I do not look forward to recieving my magazines in the mail the way I used to. What happened to the no advertising policy? I do not feel that I am getting what I am paying for. Not near as good as it used to be.I will reuse my old ones that I enjoy looking at.

I also wanted to add my "two cents" on the issue of the "new" magazine style.

 

Wouldn't it be nice if FOR ONCE someone out there in Reimanpub-land acknowledged that so many of their customers are unhappy.  I have a HUGE pile of old magazines.  They are tattered and the covers are all falling off, but one of my favorite Sunday evening couch activities is to half-watch the news and scour my old TASTE OF HOME magazines for recipes that look good - and I haven't tried yet.  My 16 year old daughter even gets in on the fun! 

 

The new magazine style is just awful!  I use to love the stories about other families, the pictures of all kinds of people - in different parts of the country - women with 10+ kids, Mennonite women, women who work, women who stay home, pictures of little kids cooking - all of it held my attention and kept me signing up year after year. 

 

I would say out of the 10 members of my immediate family that took the magazine (Taste of Home) or Quick Cooking (it was so great!) and even Light & Tasty - not a single one of us have a subscription now.  Surely our family isn't of the minority here!

 

IS ANYONE LISTENING OUT THERE IN REIMANPUB-LAND?  Please bring back our magazines!  They were loved and more importantly for you "purchased"!

Taco Macaroni is quick & easy to fix, plus it tastes great!

I wanted to add that I've been a subscriber to Taste of Home since it began in 1993--almost 16 yrs ago. And, I'm not renewing my subscription after this year. I don't like its new format, the recipes aren't as "homey" as they used to be--in fact, I can't remember when I've tried a recipe from a new issue of Taste of Home. My old issues, pre-2005, are tattered from use. I give my newer issues away to anyone who wants them.

Too bad the publishers felt a need to modernize to appeal to a new audience.

I have tried to click on recipes in this forum

when i do all I get is an ad to sign up for your mag

as  I  stated I was a subscriber..just not any longer

Too many changes for my liking

are subscribers only allowed to view this forum?

if that's the Case...i will stick with the "Recipe" forum..

good recipes there from "fine" cooks across the country...

and no mag...full of ads required!!!!

again sorry for going "OT"........
