Have now made this about a dozen times. I use whatever leftover meat I have: pulled pork, BBQ chicken, etc...it just gets better with every attempt. Just made for guests and they loved too and asked for recipe. This may be my favorite recipe ever.

Awesome!! I left out the tortillas and it was incredible. So easy, so quick. I was hesitant to make this, seemed like an odd combination of ingredients, but it turned out great. I will make this again for sure!

I used veggie crumbles instead of beef and only used half the cheese to reduce fat. SO YUMMY!

Followed recipe to the letter except for adding some chipotle hot sauce to the beef mixture. Delicious! SO EASY! and it took 20 min to prep and 20 min to cook... normally it takes me MUCH longer than the time suggested. All this makes it a winner in my book.

This was very good. Nice change from the same old thing. Will be making many for years to come. Surprised at the nice mix of the sweet potato bites with the spices.

All I have to say is WOW! I am not a sweet potato fan by any means, but wished I liked them because they are so good for you. I was hesitant when a family member first told me about this dish, but decided to give it a try. I am so glad I did, this is now one of my favorites - even the sweet potatoes in it! I follow the recipe exactly and it turns out perfect every time. Even my girls (3 & 1) gobble this dish up... thanks for a great recipe!

It was absolutely delicious! My sister and I loved it and we're going to make it again for our parents. The flavor of everything is wonderful and the sweet potatoes add a nice flavor to the dish. My sister and I substituted shredded chicken for the beef with a little seasoning and salsa for the enchilada sauce.

Wow! Pleasantly surprised. I wasn't sure about the combination at first, but it definitely blends well. Entire family loved it! Even my 3 and 13 yr old.

I did a some easy substitutes with this. I used ground turkey and some bold Penzy's taco mix instead of the spices. It came out awesome. I've made it twice. Super easy, great flavor. My 9 year old son, who swears he hates black beans did not complain about them and ate every bite.

My husband and I loved this recipe. I subsituted kidney beans for the black beans, and salsa for the enchilada sauce, and it turned out great.

My kids are picky eaters, and they even ate it all. I made each layer something different (sweet potatoes, beans, ground beef) since they aren't sure about things mixed together.

the sweet and spicy flavors were an excellent combo. I don't eat meat, so I used extra sweet potato and it was still wonderful; although, my husband would have preferred it with the meat.
