Sweet Macaroni Salad Recipe
  • Prep: 20 min. + chilling

Ingredients

  • 1 package (16 ounces) elbow macaroni
  • 4 medium carrots, shredded
  • 1 large green pepper, chopped
  • 1 medium red onion, chopped
  • 2 cups mayonnaise
  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup sugar
  • 1 cup cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Cook macaroni according to package directions; drain and rinse in cold water. In a large serving bowl, combine the macaroni, carrots, green pepper and onion.
  • In a small bowl, whisk the mayonnaise, milk, sugar, vinegar, salt and pepper until smooth. Pour over macaroni mixture and toss to coat. Cover and refrigerate overnight. Yield: 14 servings.

Have made this recipe dozens of times for potlucks and family gatherings. ALWAYS A HIT!! Sometimes use red or yellow pepper instead of green.

I would use splenda just cut in half. When I make this recipe I cut sugar and vinegar in half. If you use splenda use 1/2 cup to a cup, or 1/4 cup to 1/2 cup.

This is the best recipe I have ever used. Big hit with everyone. I cut sugar and vinegar in 1/2, and also added boiled eggs. I used Hellmans as the recipe didn't state weather Miracle Whip or Hellmans, but figured Hellmans would be better with the amount of sugar. I also had sauce left over but saved and added some more on the next day because the macaroni sucks up the sauce.

This is by far my favorite pasta salad! The only bad thing is that it has to sit overnight! As soon as I'm done making it, I want to eat it right away! One of my friends first brought this salad to a cookout and everyone there loved it. She told us she got the recipe from Taste of Home. I sat on the internet and looked until I found it and now it's a must have every summer!

maybe one can tell me why it states to use 1 cup of vinegar when i did this its the vinegar tastes we have the most of..i know cut down on the vinegar...lol

My husband loves Amish Macaroni Salad, a salad that is sold at Giant Eagle stores in the Somerset PA area. I have been on the lookout for years for a recipe for it and was unable to find one. The first time I made this, he took one bite and said "Amish Macaroni Salad!" I will make this again and again. Very good, not dry at all like most of the recipes for macaroni salad are. Although there does seem to be too much dressing. Use the extra for tossed salad or coleslaw.

I have prepared this recipe many times for luncheons, pot lucks, etc and everyone loves it. I do cut the sugar to 1/2 cup and that is plenty - I think you could probably leave out the extra sugar and not miss it too much.  It's very important to make it ahead of time so that the macaroni has time to absorb the "dressing" - I make it a day ahead and refrigerate. Always get lots of requests for the recipe too. Definitely a keeper.

My mom and I really like this macaroni salad, though my dad and my boyfriend hate it. I think to like this you have to like vinegary and sweet. I do cut the sugar in half because the first time i made it it felt like I was eating pure sugar. Usually this recipe makes a lot of sauce, so just pour a bit and mix it until u get the consistency that you want. Recipes can be adjusted, don't write this salad off just because you may not like it the first time.

Also, I use canned peas and carrots instead of peppers

I just made this for a baby shower and received a lot of compliments and several people asked for the recipe. Excellent dish and easy to make.
