My husband and three children love this tender chicken that has a spicy sauce. Peach preserves add just a touch of sweetness, while taco seasoning and salsa give this dish some kick. This entree can be made even zippier yet by adding more taco seasoning and using spicier salsa.

Wow! This was a fast, quick meal to make and it tasted great! I only need to make a meal for two so 2 chicken breasts 3/4 c. of rice and halving the rest of ingredients worked perfect. I love the low calorie count also! I will make this again!

Great flavor, quick and easy for busy moms. Even the picky eaters loved the recipe.

I found that I should have cooked the chicken in a non-stick skillet. If you like the taste of this, try Tangy Pork chops. It's another easy recipe, but it uses the crock pot.
