2-1/2 cups cubed eggplant 1 cup thinly sliced red onion 1 cup each julienned green, sweet yellow and red peppers 1/4 cup olive oil 1/2 cup chopped tomato 1 teaspoon dried oregano 1/2 teaspoon salt 1/4 teaspoon pepper 1 unsliced loaf (1 pound) Italian bread Lettuce leaves 1/2 pound sliced fully cooked ham 1/2 pound sliced cooked turkey breast 1/4 pound sliced hard salami 8 slices part-skim mozzarella cheese (8 ounces)
In a large skillet, saute the eggplant, onion and peppers in oil for 5 minutes or until vegetables are crisp-tender. Add the tomato, oregano, salt and pepper. Remove from the heat and set aside. Cut bread in half lengthwise; hollow out the bottom, leaving a 3/4-in. shell (discard removed bread or save for another use). Layer with lettuce, ham, turkey, salami and cheese. Top with sauteed
