Karen,

Rotel is a brand name of diced tomatoes that have chilies in them. You can find them where you find other diced tomatoes. They are great.

I like to make this also. But I brown 2# JD Hot Sausage, put into a crock pot after browning, add 3-4 8oz lite cream cheese, 2 cans undrained Rotel. You can heat it on high or low for time needed when done add grated cheddar cheese adn stir. Serve with Frito corn chips. Yummy

Hi there! I make this all of the time and yes, it goes very quickly! But I have a slightly different version . . 1 lb. cooked pork sausage, 2 cream cheese (i use the light) and then 2 cans of rotell (juice and all). Mix, heat and serve!!

I used low-fat cream cheese, fat free sour cream and some sausage flavored TVP to make this healthier. It still tasted great with a lot less fat.
