Super Italian Chopped Salad Recipe

Ingredients

  • 3 cups torn romaine
  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 5 slices deli ham, chopped
  • 5 thin slices hard salami, chopped
  • 5 slices pepperoni, chopped
  • 3 slices provolone cheese, chopped
  • 2 green onions, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • Pepperoncini, optional

Directions

  • In a large bowl, combine the first 11 ingredients. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese. Top with pepperoncini, if desired. Yield: 10 servings.

Editor's Note: Look for pepperoncinis (pickled peppers) in the pickle and olive section of your grocery store.

Nutritional Facts 3/4 cup equals 185 calories, 13 g fat (3 g saturated fat), 12 mg cholesterol, 444 mg sodium, 11 g carbohydrate, 3 g fiber, 7 g protein.

Keeping Lettuce Fresh

To store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

it's not too many ingredients at all... it is "antipasto" in a bowl... and then there is the "dressing" ingredients included... goodness! well worth the bit of time to produce a wonderful flavor taste! I'm in... and it will accompany me to potlucks and picnics all year long! thank you for sharing!!

I gotta say, I'm Italian and never once has it occurred to me to chop up all the ingredients . . . but I can't WAIT to try this! With a loaf of crunchy Italian bread . . . yum!

Have not made this yet, but I think I will love it.......I agree withtoothfairylin, there are a lot of people out tere that have nothing to do but criticize others..Please if you don't like a recipe, just don't make it. Others may enjoy it, so just shut up

I agree with toothfairylyn. It is so annoying for people to rate a recipe when 1)they don't make it according to the specifications of the printed recipe; 2)they complain about how there is too much fatty ingredients and calories; and 3) they make remarks before they even try the recipe. This is a site for people to try new recipes..simply as that!

Still too cold to make salads for the main course. Sounds delicious and easy to make. Will probably make with a low cal dressing as watching the weight.

I have made something similar to this before..and it was delicious and well received! The nice thing about a recipe like this is you can make it your "own" by just switching up ingredients..but we like it just like this! Once again, I have to say I am really saddened and disgusted by "reviewers" such as canddy, who have not even made the recipe, but choose to leave a mean-spirited remark. (Simple solution to your comment: leave some of the ingredients out!) If someone changes up a recipe and tells us what they did, fine..but when you haven't even tried it..PLEASE pick some other site to leave your "Debbie Downer" remarks. I always wonder how these reviewers would feel if they same thing happened to them?

I thought this recipe was great! I loved the variety of meats and also the suggestion to add mozarella cheese. Also, romaine lettuce is much crisper and lasts longer.
