Super Italian Chopped Salad Recipe

Ingredients

  • 3 cups torn romaine
  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 5 slices deli ham, chopped
  • 5 thin slices hard salami, chopped
  • 5 slices pepperoni, chopped
  • 3 slices provolone cheese, chopped
  • 2 green onions, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • Pepperoncini, optional

Directions

  • In a large bowl, combine the first 11 ingredients. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese. Top with pepperoncini, if desired. Yield: 10 servings.

Editor's Note: Look for pepperoncinis (pickled peppers) in the pickle and olive section of your grocery store.

Nutritional Facts 3/4 cup equals 185 calories, 13 g fat (3 g saturated fat), 12 mg cholesterol, 444 mg sodium, 11 g carbohydrate, 3 g fiber, 7 g protein.

Tip

Keeping Lettuce Fresh

To store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

I made this recipe Sunday for a birthday party and served it with tenderloin steaks! I followed the recipe except I used small cherry tomatoes instead of the medium tomatoes. Great side dish or for a lunch served with crusty bread. Will definitely make this again! Thanks for sharing!!

Wonderful salad ... I served four adults as a main course with a loaf of crusty bread ... we ate very bite. It's a keeper

I used to make a recipe very similar for my family when my kids were young. The first warm day of the year called for this salad for supper. We always looked forward to it. Didn't need a recipe then, just what sounded good. This sounds wonderful. Can't wait to try. Probably will limit the meats but other than that, great combo!!

This Salad was amazing. I am always looking for new and healthy recipes and this one fit the bill. My friend has diabetes so when he and his wife come over for dinner I try and make things that he can eat on a diet for diabetes. My husband and my friend and his wife loved this salad. They went back for seconds. I substituted regular olives for Kalamata Olives but left everything else the same. Yum, great salad!!!!

This salad was fantasic. My family did not like the garbanzo beans so I will omit next time. We did use our favorite salad dressing instead of the one recommended.

Too much meat in it for us. I made it without any and added extra Garbanzo Beans. After-all they soak up all the cholesterol and add a lot of fibre and protein

We use only California Virgin Olive Oil and farm produced cheese. It is excellent but don't chop the lettuce too small you need a lot of crunch for this salad. I also added Kalamata Olives.

I haven't tried this recipe yet but plan to this coming week . I gave it 5 stars because of what goes into it. It sounds so yummy and refreshing! I will come back and give a review after I try it. As for the naysayers....I agree with PugParent, astarbeyond, mnlorraine and toothfairylin.

Canddy 1) If you haven't tried it don't be dishin' out all the negitive B.S. 2 To many ingredients and to difficult, Come on .. throw it into a food processor, chop it up, throw it in a bowl, add the dressing and enjoy!!!! That sounds pretty easy to me!! and for GreggJohns... I"m sure you've heard of and have seen "Low Calorie" items that are listed in the recipe at the store, Use them!!!!! But really...185 calories If that's to many...see a Dr. I will post again after I have made it and have given it a try. Thanks for all the great reviews, you all really inspired me to try this!!!! :)

I know that this salad is amazing as I make one very similar for my family of 5 kids and husband. I look for new ideas on taste of home and love what I find. What I get sick of is when someone like Canddy or GreggJohns like to make ignorant comments that aren't necessary for the site. If Canddy thinks this has too many unncesary ingredients, she can eat a boring lettice and dressing salad as it seems too difficult to add a few more flavors but easy to criticize. . If Greggjohns is concerned about calorie count, he can check out Nutrisystem as it's helped out Janet Jackson and Terry Bradshaw! Or, there is GastricBypass and even better yet, look for, try and comment on recipes that fit your needs in lieu of making comments on recipes are not listed as "diet food". I wish courtesy & intelligence was contagious.
