Sunny Apple Salad Recipe

Ingredients

  • 2 medium red apples, diced
  • 1 medium green apple, diced
  • 1 medium carrot, grated
  • 1 can (8 ounces) DOLE® Crushed Pineapple in 100% Pineapple Juice, drained
  • 3 tablespoons orange juice concentrate

Directions

  • In a bowl, combine all ingredients; mix well. Cover and refrigerate until serving. Yield: 10-12 servings.

Nutritional Analysis: One 1/2-cup serving equals 36 calories, 2 mg sodium, 0 cholesterol, 9 gm carbohydrate, trace protein, trace fat. Diabetic Exchanges: 1/2 fruit.
