Sun-Dried Tomato Garlic Bread Recipe

Ingredients

  • 1/4 cup butter, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped oil-packed sun-dried tomatoes
  • 1 to 2 garlic cloves, minced
  • 1/2 loaf Italian bread, halved lengthwise

Directions

  • In a small bowl, combine the butter, cheese, tomatoes and garlic. Spread over cut sides of bread. Transfer to an ungreased baking sheet.
  • Broil 4 in. from the heat for 3-4 minutes or until golden brown. Cut into slices and serve warm. Yield: 6 servings.

Nutritional Facts 1 slice equals 189 calories, 10 g fat (6 g saturated fat), 23 mg cholesterol, 332 mg sodium, 20 g carbohydrate, 1 g fiber, 5 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

I made this for a group lunch. Everyone liked it and every piece was eaten. I will definitely be making it again! I doubled the recipe but only used 2 cloves of garlic because I didn't want it to be too garlicky. You almost couldn't taste the garlic which was what I was going for.
