Sugar-Topped Applesauce Muffins
My five brothers, two sisters and I grew up on a farm and built up hearty appetites doing various chores. It seemed no matter what I helped Mom cook was gobbled up. That encouraged me to spend more time in the kitchen!
12 Servings
Prep/Total Time: 25 min.
Ingredients
2 cups biscuit/baking mix
1/4 cup sugar
1 teaspoon ground cinnamon
1 egg
1/2 cup applesauce
1/4 cup milk
2 tablespoons vegetable oil
TOPPING:
1/4 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted
Directions
In a bowl, combine the biscuit mix, sugar and cinnamon. In another
bowl, beat the egg, applesauce, milk and oil. Stir into dry
ingredients just until moistened.
Fill greased or paper-lined muffin cups two-thirds full. Bake at
400° for 10-12 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
In a small bowl, combine sugar and cinnamon. Dip muffin tops in
melted butter, then in cinnamon-sugar. Yield: 1 dozen.
