Sugar-Topped Applesauce Muffins Recipe

Ingredients

  • 2 cups biscuit/baking mix
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/2 cup applesauce
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • TOPPING:
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

Directions

  • In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
  • In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar. Yield: 1 dozen.

Nutritional Facts 1 serving (1 each) equals 165 calories, 8 g fat (3 g saturated fat), 24 mg cholesterol, 279 mg sodium, 22 g carbohydrate, 1 g fiber, 2 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas
