Strawberry Shortcake Dessert Recipe
  • Prep: 10 min. Bake: 30 min. + chilling

Ingredients

  • 1 package white cake mix (regular size)
  • 1-1/3 cups water
  • 1/4 cup unsweetened applesauce
  • 2 egg whites
  • 1 egg
  • 1 package (.6 ounce) sugar-free strawberry gelatin
  • 2 cups boiling water
  • 1 package (16 ounces) frozen unsweetened whole strawberries, thawed, drained and sliced
  • 1 carton (16 ounces) frozen reduced-fat whipped topping, thawed
  • 10 fresh strawberries, halved

Directions

  • In a large bowl, combine the cake mix, water, applesauce, egg whites and egg; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
  • Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  • In a large bowl, dissolve gelatin in boiling water. Stir in strawberries. Using a sharp knife, make a diamond pattern in the top of the hot cake; immediately pour gelatin mixture over cake. Cool on a wire rack.
  • Refrigerate for at least 6 hours. Spread with whipped topping. Garnish with fresh strawberries. Yield: 20 servings.

Nutritional Facts 1 piece equals 179 calories, 5 g fat (3 g saturated fat), 11 mg cholesterol, 192 mg sodium, 29 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 2 starch, 1/2 fat.

Made this for the past weekend and EVERYONE loved it! I did use fresh strawberries and I added blueberries as a touch for the 4th!! I will make it again & again! I am diabetic, and using no sugar added items was a big help! I am always looking for new recipes and this certainly is a keeper!!

Made according to recipe, but changed the top from fresh strawberries to blueberries in celebration of July 4th. It was wonder and as a person on Weight Watchers, gave me an excellent dessert option that kept me on program!

Both my future mother and father-in-law are diabetic. I brought this to a cookout and it recieved rave reviews. I used the reduced-sugar cake mix, too, and it didn't affect the outcome! This is definately one I'll be keeping around since it's so easy and quick to make.

I got the recipe for this cake in an email and it looked so easy I decided I'd give it a try for our July 4th party. It was a hit!! Everybody loved it and several asked for the recipe. Based on the nutritional information, I calculated the Weight Watcher points and a slice is 4 points. Since I am on Weight Watchers,I will definitely make it again.

Great recipe! So moist and full of flavor, the box cake mix makes it a snap to make. We are very calorie conscious and this was definitely "light" in my book! Thanks for a nice twist on an old favorite recipe :)
