Strawberry-Rhubarb Upside-Down Cake Recipe Rating 5

In Thompson Falls, Montana, Bonnie Krogman uses a boxed cake mix to create this quick and colorful dessert. "I prepare it often in the summer when fresh rhubarb is abundant," she notes. "When I take it to church potlucks, people really cleanup the pan fast."

Great cake to serve for friends and family. I made it for large crowds for a pot luck and it was the first thing to go. Hint with the cake mix, If you use a box mix supliment the oil with apple sause. It makes the cake moist and better for ya.

This has become a family favorite here. It is so easy to make and quickly dissappears in our house. Our rhubarb thrives all summer long and I used to just let it go after a few cuttings. I now make this cake several times through out the summer now and it never goes to waste.

This recipe is a family favorite! It is quick and easy to make and it looks really pretty when served. I found that I like the results best when I use fresh rhubarb instead of frozen.

I have been looking for a recipe just like this one. I`ll be making it to take to a bbq tomorrow. I`ll let you know how it turns out.

So you live in Thompson Falls? I have been camping with my family on Thompson River Road numerous times when I was a teenager. Hubby and I now live in Eureka.

Thanks for the recipe.

My husband love strawberry rhubarb pie, its his favorite thing ever. When I saw this recipe I knew I had to try it. It was so easy to prepared and was so delicious. I cute the recipe in half and then was sorry there wasn't more cake!!! I didn't use a box mix though, I made half a recipe for white cake (I used a taste of home recipe, fruit filled white cake, it was GOOD)
