Strawberry Pie Recipe
  • Prep: 20 min. + chilling
  • Yield: 8 Servings

Ingredients

  • 2 pints fresh strawberries, hulled
  • 2 tablespoons cornstarch
  • 1-1/2 cups cold water
  • 1 package (.3 ounce) sugar-free strawberry gelatin
  • 3 tablespoons sugar
  • 1 reduced-fat graham cracker crust (8 inches)
  • 2 cups reduced-fat whipped topping

Directions

  • Set aside four whole berries for garnish. Slice remaining strawberries and set aside. In a large saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Remove from the heat; stir in gelatin and sugar until dissolved. Stir in sliced strawberries. Pour into the crust. Cover and refrigerate for 2 hours or until firm.
  • Cut reserved strawberries in half. Garnish each serving with whipped topping and a berry half. Yield: 8 servings.

Nutritional Analysis: One serving (1 piece with 1/4 cup whipped topping) equals 197 calories, 5 g fat (3 g saturated fat), trace cholesterol, 125 mg sodium, 33 g carbohydrate, 2 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1 fruit, 1 fat.

Made with regular strawberry gelatin and did not add the 3T sugar. It was easy and bright. The family loved it!

Light and refreshing and so easy to make!! My husband is diabetic and also needs to watch sodium intake. One slice of pie was only 2 carb choices--far less than most other desserts. I did use real whipped cream instead of whipped topping, which neither of us cares for, and it made for a rich-tasting dessert that's pretty and healthy. I liked the idea of an earlier poster who served it in a parfait glass. You could layer the strawberries with chunks of angel food cake, shortcake or pound cake and it would look and taste great with minimal fuss on your part. Can't wait to take advantage of the yummy strawberries in season and try this again!

I made this even healthier...

Prepared the filling using Splenda instead of sugar and then filled stemware glasses with the filling instead of using the pie crust

I used crushed strawberries in place of the water. Used rather small berries, so didn't slice them. Whipped topping is a "No No", on my husbands heart diet. Just a plain excellent and tasty recipe.

I have been making this recipe since it came out back in 2004?. I never change a thing and it comes out the same over and over. Refreshing, low cal, low fat, cant beat it for a summer treat.

I make a pie similar to this. It's a weight watchers receipe. Instead of the water, use ginger ale and omit the extra sugar. Just as good.

This recipe was one featured and thought I would try it. I have made it several times, absolutely delicious. I use frozen strawberries, slice while still cold. I also made it using raspberries, equally delicious. Also have recommended this and given out copies of recipes.

I tried this recipe and it was absoultely delicious. My husband love desserts but without loads of sugar. This one is easy to convert(as most of your desserts are) to sugar free. I will use it often.

Really easy and tasty. As I picked my berries by the pound, my only problem was finding out what the equivilant of 2 pints is using lid measuring cups. It would have been much easier if the directions added how many cups, etc. equals 2 pints.

I have made 3 of these pies, they are soooo good. You can add 3 Tlb.splenda to cut down on the sugar even more. I will be making more of these.

Oh My! I made the strawberry pie last weekend and it was luscious! The only thing I would change is the size of the graham cracker crust. Next time I will use the two extra serving size of the graham cracker crust because I couldn't fit all of the strawberry filling into the regular size crust. Outside of that, the pie was excellent and with low fat and little sugar, it was certainly guilt free!

I used a chocolate graham cracker crust, splenda instead of sugar, and added a few drops of red food coloring to make it a deep red. My husband, a diabetic, absolutely loved it! One of his favorites. I personally would have made it sweeter. Next time I will add more splenda. Overall, very good.

I tried both the Strawberry and Peach version using thawed frozen peaches. The Peach was absolutely YUMMY!!! Couldn't tell a bit that it was made with sugar-free jello! Added 1/4 tsp. butter flavoring for a little extra smoothness.

never thought about using peaches - I use sugarfree Jello with strawberries and like sleepygal, I've made this for over 30 years and I do prefer the pastry crust. It's always a winner at our house!

I've used the original version of this recipe for over 30 years and this tastes exactly the same, except for the crust. However, the graham cracker crust tastes great, and it's also a big time saver from the baked crust. I very heartily recommend this recipe. Oh, btw, the fresh strawberries can be left whole if you prefer, just be sure to trim off the stems.

A surprisingly very good recipe for strawberry pie. I too used the Splenda in place of sugar. It cuts amazingly well. Can't wait to try this out on peaches and peach Jello.

I should have enter this recipe 20 years ago in a contest as I adjusted the orginal recipe using 1 cup sugar and package of regular jello to sugar free jello and 1/4 cup sugar.

I made this pie for lunch for last Sunday and it sure was hit. simple to make and delicious. I used the spray can of whipped cream to put on the top and it was fine.I also liked the idea that it was a light dessert.

Very easy to make and just as easy to eat! This is an excellent "teaching" recipe for young cooks, lets them have success without a lot of clean up or worry about the end result. Excellent dessert/snack. Now part of our families summertime menu!

I made the pie with fresh strawberries, and my family just loved it. For the 4th of July, I plan to make it with strawberries and blueberries, and a little Cool Whip for the third color. I'm also going to make it with fresh peaches and peach Jello to take to a get-together on Monday. Guess you could say I have a new simple and delicious light dessert recipe.

I have tried this pie and it is really easy to do and the result is just delicious! I have done it quite a number of times now and it has always gone down well, and impressed my guest! For an even healthier version I 3 tablespoons of Splenda instead of sugar and it turns out just as great. Thumbs up for this one!
