Strawberry Mousse Recipe

Ingredients

  • 4 cups fresh or frozen unsweetened strawberries
  • 1/2 cup sugar
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed

Directions

  • In a food processor, combine strawberries and sugar; cover and process until smooth. Strain and discard seeds. Return strawberry mixture to the food processor. Add pudding mix; cover and process until smooth.
  • Transfer to a large bowl; fold in whipped topping. Spoon into dessert dishes. Refrigerate until serving. Yield: 8 servings.

Nutritional Analysis: One serving (1/2 cup) equals 145 calories, 3 g fat (3 g saturated fat), 0 cholesterol, 148 mg sodium, 27 g carbohydrate, 2 g fiber, trace protein. Diabetic Exchanges: 1 starch, 1 fruit, 1/2 fat.

Where does 3gr of fat com from for just the cool whip. or is it the puddiong. could use sugar free and fat free to mak it lighter.

Would this serve 12 or 8? Both serving numbers are given on the recipe.

was thinking you could use other berries, raspberries, blackberries, blueberries etc. but you would have to increase cups to one half to a whole for recipe. also, why not use peaches too. just thinking of the different fruits that could be used.

i agree with tgbvmb that splenda instead of sugar will keep this lower in calories but will also help diabetics enjoy a great dessert too.

To cut even more calories, use a calorie-free sweetener, such as Splenda, instead of the sugar.
