Strawberry Jam Bars Recipe

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tablespoon honey
  • 1-1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 2/3 cup strawberry jam
  • 1/2 cup chopped walnuts

Directions

  • In a bowl, cream butter and sugar. Beat in egg and honey. Combine the flour, baking powder, allspice and nutmeg; gradually add to creamed mixture.
  • Divide the dough in half; spread half into a lightly greased 9-in. square baking pan. Spread with jam. Drop remaining dough by teaspoonfuls over jam. Sprinkle with walnuts.
  • Bake at 350° for 25-30 minutes or until top is golden brown. Cool on a wire rack. Cut into bars. Yield: 16 bars.

These have a nice flavor to them. Dropping the batter onto the strawberry layer is rather tedious, and my bars were a little bit too soft. Maybe I needed to bake them longer.
