Ingredients

2 cups torn romaine
1/2 cup sliced fresh strawberries
1/4 cup thinly sliced red onion
2 tablespoons slivered almonds
DRESSING:
1/4 cup mayonnaise
1 tablespoon sugar
1 tablespoon half-and-half cream
1 tablespoon raspberry vinegar
1 teaspoon red raspberry preserves
1/2 teaspoon poppy seeds

Directions

In a serving bowl, combine the romaine, strawberries, onion and almonds. In a small bowl, whisk the dressing ingredients; serve with salad. Yield: 2 servings.

Nutrition Facts: 1 serving equals 319 calories, 27 g fat (4 g saturated fat), 14 mg cholesterol, 160 mg sodium, 18 g carbohydrate, 3 g fiber, 3 g protein.

Keeping Lettuce Fresh

To store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.
