These cupcakes go together super-quick. Pistachio pudding mix gives them a mild flavor and pretty pastel color that makes them perfect for St. Patrick's Day. —Kathy Meyer, Almond, Wisconsin

Okay I finally just made these cupcakes today as I was waiting for a reply from TOH to correct the recipe. I made mini cupcakes (yielded 52). Couldn't wait to taste them and was very disappointed when I did eat one. They were very blah. These are for the children in my class at school tomorrow. Hopefully the frosting (tinted green with decorations) will make them taste better. Sorry!

I agree with Kerry Amundson (first reviewer) this recipe needs help. I can figure it out but she is right in saying that cinnamon and baking soda are not listed in the list of ingredients. And also there is no mention of when to add the pistachio pudding and vanilla extract. Bad instructions.

My family loves these! They are so simple to make and taste scrumptious. They actually don't even need frosting, but I like to top them with cool whip.
