"These stir-and-bake cupcakes go together super-quick," remarks Kathy Meyer of Almond, Wisconsin. Pistachio pudding mix gives them a mild flavor and pretty pastel color that makes them perfect for St. Patrick's Day.

My family loves these! They are so simple to make and taste scrumptious. They actually don't even need frosting, but I like to top them with cool whip.

I make these cupcakes every year and people look forward to them. I make them in miniature papers and they go further.
