Spicy Cranberry Relish

Ingredients
- 3 cup fresh cranberries
- 1 jalapeno pepper, seeded, and chopped
- 3/4 cup chopped onion
- 2 tablespoons fresh ginger root, chopped
- 1/2 cup fresh cilantro
- 5 tablespoons fresh lime juice
- 2 teaspoons grated orange peel
- 1/4 cup tequila, 80 proof, optional
- 3 tablespoons orange liqueur or 1 tablespoon more orange peel
- Pinch salt, to taste, optional
Directions
- Sort and rinse cranberries, discard soft or decayed berries.
- In food processor or blender, puree cranberries, chili, onion,
- ginger, cilantro, lime juice, orange peel, tequila (if desired), and
- orange liqueur (or extra peel) until finely diced.
- Season with salt to taste.
