Ingredients

  • 1 pound boneless beef sirloin or top round steak (3/4 inch thick)
  • 1 tablespoon canola oil
  • 1 cup baby carrots, cut into thin strips
  • 4 ounces fresh snow peas, cut into thin strips
  • 1 medium onion, cut in half lengthwise and sliced
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh gingerroot
  • 1 package (32 ounces) Swanson® Beef or Lower Sodium Beef Broth
  • 1 tablespoon soy sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups Chinese-style noodles or hot cooked jasmine rice

Directions

  • Slice beef into very thin strips. In a large nonstick skillet over medium-high heat, stir-fry beef in oil until browned and tender; remove beef.
  • Add carrots, peas, onion, garlic and ginger; stir-fry until vegetables are crisp-tender. Add broth, soy sauce and red pepper flakes. Return beef to pan and heat through. Spoon 1/3 cup noodles in six soup bowls. Ladle about 1 cup meat mixture into bowls. Yield: 6 servings.
