Spiced Nuts Recipe
  • Prep: 20 min. + cooling
  • Yield: 10 Servings

Ingredients

  • 1/4 cup butter, cubed
  • 1/2 cup plus 3 tablespoons sugar, divided
  • 2 teaspoons ground cardamom
  • 1 cup salted cashews
  • 1 cup salted peanuts
  • 1 cup pecan halves

Directions

  • In a large heavy skillet, melt butter. Add 1/2 cup sugar; cook and stir over high heat until sugar is dissolved. Meanwhile, place cardamom and remaining sugar in a large bowl; set aside.
  • Reduce heat to medium; add the cashews, peanuts and pecans to butter mixture. Cook and stir until nuts are toasted, about 3 minutes. Add hot nuts to reserved cardamom mixture; toss to coat. Spread on foil to cool. Yield: 3-1/2 cups.

Nutritional Facts 1/3 cup equals 349 calories, 27 g fat (6 g saturated fat), 12 mg cholesterol, 196 mg sodium, 22 g carbohydrate, 3 g fiber, 8 g protein.

Wow! These nuts are amazing. My husband requests them all the time. I'm even going to experiment with the spices in the future. Perhaps cinnamon, pumpkin pie spice and cocoa powder. They make a great gift too. Sure beats paying for the overpriced specialty nuts in the store.

Thought these very very good. Could I toast some almonds and add them in place of pecans? Hubby loves almonds while pecans do not rate high on his list?

This is my very favorite recipe for spiced nuts, and I've tried quite a few different recipes. I've tried ones where you're supposed to toss the nuts in foamy egg whites, and I think this recipe and way of preparing them is much better. It's very easy to make, and the cardamom adds such a nice flavor. I love making these nuts to put on a spinach salad with dried cranberries and feta cheese.

do not make this recipe! we tried twice, and it never turned out, sugar and butter just clumped up! I'm sure there's something missing!

I'm not a big fan of the cardamom on the nuts. I get nothing but compliments from those I gave the nuts to for the holidays.

These nuts are terrific! Easy to make and have a really nice flavor to them. Will definitely make them again.

Made for Thanksgiving 2009 and making again (by request) for Christmas 2009. Use a large pan, tried a smaller pan and handle bunches of nuts that I broke apart. No one really minded though.
