Whenever I went to Grandmother's, she served these flavorful bars, topped with creamy frosting. Today, I do the same for our grandchildren, who like the little treats just as much.

Spice Cake Bars Recipe

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup molasses
  • 1 cup hot water
  • 1 egg
  • 3 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 2 teaspoons ground allspice
  • 1 teaspoon baking soda
  • 1 teaspoon ground cloves
  • FROSTING:
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 2 to 3 teaspoons lemon juice
  • 4 cups confectioners' sugar

Directions

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in molasses and water until blended. Combine the flour, ginger, allspice, baking soda and cloves; gradually add to the creamed mixture.
  • Pour into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 375° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
  • Meanwhile, in a small bowl, beat shortening, butter and lemon juice until smooth. Beat in sugar until light and fluffy. Frost bars. Yield: about 2 dozen.

Nutritional Facts 1 serving (1 each) equals 345 calories, 16 g fat (8 g saturated fat), 40 mg cholesterol, 177 mg sodium, 50 g carbohydrate, 1 g fiber, 2 g protein.

I run a kitchen in a small hospital and it was cook's choice cake day and my cook wanted to make spice cake. We ran across this recipe and she raved about it. Thanks for the recipe!

I really liked these bars a lot....they have a lovely taste. BUT unfortunately they were a tad dry. Perhaps it was my fault somehow, not the recipe. If I knew how to solve that problem, I'd be thrilled because I would like to consider this recipe a keeper. I will make a few adjustments, be sure not to over-bake them, and hope for the best! These are too good to give up on so easily.
