Spice Baked Rice

1 pound ground beef 1 medium green pepper, chopped 1 medium onion, chopped 3 cups cooked long grain rice 1 can (14-1/2 ounces) stewed tomatoes 1-1/2 cups tomato juice 1 teaspoon salt 1 teaspoon chili powder 1 teaspoon ground mustard 1 teaspoon dried oregano 1/2 teaspoon hot pepper sauce 1 cup (4 ounces) shredded cheddar cheese
In a skillet, cook beef, green pepper and onion over medium heat until meat is no longer pink and the vegetables are tender; drain. Add the next eight ingredients; mix well. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 35 minutes. Uncover and sprinkle with cheese. Bake 10 minutes longer or until the cheese is melted. Make Spicy Baked Rice as hot or as mild as you'd like. For extra zest, use Mexican-style stewed tomatoes. If you prefer a little less heat, omit the hot pepper sauce.
