My children absolutely love these tender "mini" potatoes. Fingerling potatoes can be found at the farmers market and specialty grocery stores, though Yukon Gold would work, too.

Spectacular Fingerling Potatoes Recipe

Ingredients

  • 1 pound fingerling potatoes
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons minced fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
  • 1 tablespoon butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10 minutes. Drain. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Combine the remaining ingredients; drizzle over potatoes and toss to coat.
  • Bake, uncovered, at 425° for 8-10 minutes or until tender, stirring once. Yield: 5 servings.

Nutritional Facts 3/4 cup equals 141 calories, 9 g fat (3 g saturated fat), 9 mg cholesterol, 184 mg sodium, 12 g carbohydrate, 2 g fiber, 3 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.
