Special Cranberry Nut Muffins Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup butter, melted
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • CARDAMOM BUTTER:
  • 1/2 cup butter, softened
  • 1/4 cup confectioners' sugar
  • 1 teaspoon ground cardamom

Directions

  • In a bowl, combine the dry ingredients. Stir in the buttermilk, egg, butter, cranberries and nuts just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
  • Bake at 400° for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to wire racks. Combine cardamom butter ingredients; serve with muffins. Yield: 14 muffins (about 3/4 cup butter).

Nutritional Facts 1 serving (1 each) equals 297 calories, 16 g fat (8 g saturated fat), 51 mg cholesterol, 246 mg sodium, 35 g carbohydrate, 1 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

My husband and I really liked these muffins..I added a struesle topping and used pecans instead of walnuts. I will certainly make them agan.I'm going to try this reciped with dried sour cherries next.
