Spanish Rice Recipe

Ingredients

  • 1/4 cup butter, cubed
  • 2 cups uncooked instant rice
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 cup boiling water
  • 2 beef bouillon cubes
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • In a saucepan over medium heat, melt butter. Add rice and stir until browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until the liquid is absorbed and rice is tender. Remove bay leaf before serving. Yield: 4-6 servings.

Nutritional Facts 1 serving (3/4 cup) equals 217 calories, 8 g fat (5 g saturated fat), 20 mg cholesterol, 886 mg sodium, 33 g carbohydrate, 2 g fiber, 4 g protein.

I love this rice! I 'health it up' a bit by cooking whole grain brown rice in beef broth. About halfway through the cook time, I add the onion, garlic, bay leaf, sugar, salt and pepper. Sometimes I'll throw in a dash of chili powder and cumin. It's very yummy!

My kids hate Spanish Rice from a box and wine evertime I made it. I tried this one where I can control the spice and now they love it. I'll never use the box again.

What a great recipe! I had been using packaged Spanish Rice, but this is WAY better and just about as easy and quick!

My family loves this as a side dish with chicken fajitas. I add chopped green peppers to mine and leave off the sugar and reduce the salt to 1/2 teaspoon. It is delicious. Thanks for a great and easy side dish recipe.

Everyone loved the flavor & moisture of the rice. I was surprised with how well it turned out. Definitely better than anything out of a box, and it didn't take much more effort!

I am cooking for a 15 man harvest crew and make this weekly. Its a big hit! The only thing I add is a can of tomato sauce along with the boiling water.
