So-Easy Truffles Recipe

Ingredients

  • 1 package (16.6 ounces) cream-filled chocolate sandwich cookies
  • 1 package (8 ounces) cream cheese, cubed
  • 1 cup chocolate wafer crumbs

Directions

  • Place cookies in a food processor; cover and process until finely crushed. Add cream cheese; process until blended. Roll into 1-in. balls. Roll in wafer crumbs. Store in an airtight container in the refrigerator. Yield: 4 dozen.

    Peanut Butter Truffles: Substitute a 16-oz. package of peanut butter cream-filled sandwich cookies for the chocolate sandwich cookies. Omit chocolate wafer crumbs. Melt 12 ounces of milk chocolate candy coating; stir until smooth. Dip balls in chocolate; place on waxed paper until set. Store in the refrigerator.
  • Yield: 4 dozen.
  • Vanilla Cookie Truffles: Substitute a 16-oz. package of cream-filled vanilla sandwich cookies for the chocolate sandwich cookies. Melt 12 ounces of milk chocolate candy coating; stir until smooth. Dip balls in chocolate; sprinkle with 1/4 cup chocolate crumbs. Place on waxed paper until set. Store in the refrigerator.
  • Yield: 4 dozen.

Nutritional Facts 1 truffle equals 73 calories, 4 g fat (2 g saturated fat), 5 mg cholesterol, 79 mg sodium, 9 g carbohydrate, trace fiber, 1 g protein.

A friend from work recently made these, but rather than rolling in chocolate wafers, she dipped hers in chocolate coating. I loved them so much that I made them as well. I didn't feel like dipping mine, so I melted chocolate and filled candy wrappers (like a mini peanut butter cup) with a little chocolate, then a small ball of the oreo/cream cheese mix, then more chocolate on top/sides. They turned out great and were a big hit.
