Snowball Cookies Recipe

Ingredients

  • 1/2 cup Crisco® Light Olive Oil
  • 1 1/4 cups quick rolled oats
  • 1 (18.25 oz.) pkg. Pillsbury® White Cake
  • 2 large eggs
  • 2 tsps. clear vanilla
  • 1/2 cup finely chopped walnuts
  • Powdered sugar

Directions

  • Heat oven to 350°F.
  • Combine olive oil and oats. Let stand 5 minutes. Stir in cake mix, eggs and vanilla until well blended. Fold in nuts. Form into 1-inch balls and place about 2 inches apart on ungreased cookie sheet.
  • Bake 8 minutes or until set. Cool on cookie sheet 1 minute. Remove cookies to cooling rack. Roll in powdered sugar while still slightly warm. Yield: 7 dozen cookies.

I used EVOO as I didn't have light olive oil, and rice krispies instead of nuts. Cookies were great, kids loved them. They were way too sweet for me though.

I've tried many different recipes for Snowball Cookies and I like these the best! They had a great vanilla flavor. I used regular REAL vanilla, not the imitation or the clear vanilla that the recipe called for. Otherwise, followed the recipe exactly.

Can't use nuts so went with crushed Holiday Rice Krispies. 'Snowball' cookies are likely supposed to be white but the red/green crisps added holiday flair.

CAN I USE BERTOLLI EXTRA LITE OLIVE OIL AND PILLS. MOIST SUPREME CAKE MIX. MY HUSBAND SHOPPED.

I love almond flavoring, so I substituted almond extract for the vanilla. Very good cookie! Will make it again!

I haven't really tried these cookies yet. I am 72 years old and have been baking for over 50 years(I've been married that long). I bake over 50 different cookies at Christmas however I get so tired of finding recipes that call for nuts. Nuts can be expensive not to mention the butter I use. I don't mind the butter but I do mind the nuts. Does anyone out there omit the nuts completely in recipes. Thanks and Happy Holidays to all.

very easy to make. everyone in my home loved them, but I thought they had a funny after taste (possibly the cake mix). gonna try again since I know that between my husband and 6 kids they will be eaten :) think i may even mix it up fot the holiday and use chocolate cake and crushed candy cane instead of white cake & nuts

You can use Rice Krispies cereal in place of the nuts; you could also try chocolate chips--or any other type of baking chip that you like.

Kerry,

the cookies can be made without the walnuts. You can use pecans if you wish or omit the nuts altogether. I have also used grapenuts cereal, if you'd prefer that.
