Smoky Chicken Spread Recipe
  • Prep: 10 min. + chilling
  • Yield: 32 Servings

Ingredients

  • 3 cups finely chopped cooked chicken
  • 1/2 cup finely chopped celery
  • 1/2 cup coarsely chopped smoked almonds
  • 3/4 cup mayonnaise
  • 1/4 cup finely chopped onion
  • 1 tablespoon honey
  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • Crackers

Directions

  • In a large bowl, combine the first eight ingredients. Cover and chill at least 2 hours. Serve with crackers. Yield: 4 cups.

This was absolutely the BEST chicken salad I have ever had the pleasure of eating! I know this is supposed to be an appetizer but this is going into the lunch rotation as it made a fine sandwich on a hearty bread. Definitely a keeper!

This recipe is WONDERFUL! My son and husband fought over the last of it! The only change I made was to use fat-free mayonnaise.

I served it with a healthy asparagus dill soup! GREAT lunch

Exceptional - I will definately make this MANY times. No changes necessary - absolutely PHENOMENAL. I will need to make another batch for the family get together this weekend. WOW! It is a clever recipe with the chicken, the honey, the smoked almonds. What a sweet harmony of flavors. Even a fussy palate would appreciate this one.

I left out the celery and honey because I don?t like celery and honey didn?t sound like it would be good in this recipe.

A few substitutions: I used grilled chicken breast that I already had in the fridge, green onion instead of reg onion; Light mayo. It was very easy and very good. I served it with baked, whole grain pita chips.

Haven't made this as yet, but I can judge the producy from the recipe when it is this simple. I will use my smoke/grilled chicken and get the smoky taste, and use the pecans or walnuts, of which I have plenty and don't have smoky almonds without a special purchase. I know my church pals will love the sandwiches made with this when I take them for our lunch during our garage sale next week. I like it!

This is a wonderful recipe!! The honey adds a certain something you can't quite put your finger on, and the smoked almonds are excellent. I didn't have chicken when I made it, but I DID have a lot of leftover turkey breast, which I chopped very fine. It was awesome. I recommend buying somewhat expensive crackers--this spread deserves to be presented as nicely as possible (it's also terrific as a sandwich filling with a good, homemade soup).
