I'm always looking for good crockpot recipes and this one is a favorite. I love how spices and fresh cilantro give it so much flavor. Sometimes I cook the meat up the day before to save time the following day.

I had this recipe this past weekend while my husband and I worked outside all day. It took little effort to put together and finish with the corn bread, which was incredibly moist! I added some sugar to the corn bread mix for added sweetness (personal preference). I was YUMMY and I'm very glad there are leftovers!

Had some problems baking the break in my cooker but a piece of Aluminum foil did the trick!

Did some personal tweaking on it and it was DELISH! (I'm sure it's great without tweaking too). I used ground turkey instead of beef, green enchilada sauce and instead of using pinto beans I added 1 can Mexican chili beans AND 1 can seasoned black beans. I added 1 tsp garlic powder & 1 tsp onion powder. It was a total hit!! You can control the heat by using mild enchilada sauce and less chili powder (or vice versa). Thanks :)
