Slow Cooker Tamale Pie Recipe

Ingredients

  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (10 ounces) enchilada sauce
  • 2 green onions, chopped
  • 1/4 cup minced fresh cilantro
  • 1 package (8-1/2 ounces) corn bread/muffin mix
  • 2 eggs
  • 1 cup (4 ounces) shredded Mexican cheese blend
  • Sour cream and additional minced fresh cilantro, optional

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the cumin, salt, chili powder and pepper.
  • Transfer to a 4-qt. slow cooker; stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro. Cover and cook on low for 6-8 hours or until heated through.
  • In a small bowl, combine muffin mix and eggs; spoon over meat mixture. Cover and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
  • Sprinkle with cheese; cover and let stand for 5 minutes. Serve with sour cream and additional cilantro if desired. Yield: 8 servings.

Nutritional Facts 1-1/4 cups (calculated without sour cream) equals 392 calories, 16 g fat (7 g saturated fat), 107 mg cholesterol, 1,149 mg sodium, 41 g carbohydrate, 5 g fiber, 21 g protein.

We have made this recipe several times and it is a keeper! Finally looked it up and put it in my recipe box. I am trying to mix everything up the day before and just put the slow cooker in the morning before work. Great hearty meal for my husband who works construction and our daughter who loves beans!

Classic ! takes me back to the Elementary School hot lunch .I kicked it up with a lil crushed red pepper ( just a pinch ) a lil white onion , bell pepper , blk olives & mexican corn . Oh soooooo good !!

My husband and I both love this recipe. I used frozen corn instead of canned and changed the black beans for pinto beans and it turned out great. This is now on rotation for favorite recipes. Can't wait to see how the grandkids like it.

Great all-around. I even doubted the topping, but boy was I mistaken! Delicious and easy. I even threw in a chopped sweet potato that needed to be used, and it went great. I love recipes you can add pretty much anything you have on hand to and it still works.

Oh my gosh! This was so good! I was worried it would be too juicy but it wasn't at all . . . just right. The corn bread puffed up and it was absolutely wonderful! Next time I'll be sure and have fresh cilantro. I know we will be making this again. Thanks for the great recipe.

This one got a thumbs' up from the kids and the adults in our house. There is a bit of a kick to it, but even my youngest ate it without complaining. I especially loved it with the fresh cilantro and sour cream on the side!

I had this recipe this past weekend while my husband and I worked outside all day. It took little effort to put together and finish with the corn bread, which was incredibly moist! I added some sugar to the corn bread mix for added sweetness (personal preference). I was YUMMY and I'm very glad there are leftovers!

Did some personal tweaking on it and it was DELISH! (I'm sure it's great without tweaking too). I used ground turkey instead of beef, green enchilada sauce and instead of using pinto beans I added 1 can Mexican chili beans AND 1 can seasoned black beans. I added 1 tsp garlic powder & 1 tsp onion powder. It was a total hit!! You can control the heat by using mild enchilada sauce and less chili powder (or vice versa). Thanks :)

We enjoyed this recipe very much and it was so easy. It's similar to a thick Taco Soup with yummy cornbread on top. Flavors were a perfect blend for us! I've already added it to my menu list.

Excellent!! My husband and I are on low fat, low salt cardiac diets, so I substituted ground turkey for the ground beef, and left out the salt . . . and it was STILL delicious. I froze the left-overs, and it was great re-heated, too. I'm getting ready for my monthly cooking day, and my husband made a special request for more Slow Cooker Tamale Pie. Thank you!

Very good! I skipped the corn bread and served with (hint of lime)Tortilla chips. I forgot to add the cheese, but it was excellent without it. Will make again.

Colorful, easy and delicious. Since the corn muffin batter is extremely thick with 1 box mix and two eggs, I added about 1/3 cup of milk and it baked the corn muffin topping very light and airy. Will definitely make this again, maybe substituting 1 package of taco seasoning for the cumin, chili powder and salt and seeing what happens. Love the convenience of this recipe.

This recipe was extremely easy to make, and delicious to eat! I didn't have green onions, so I substituted a whole medium white onion. Also used a can of diced tomatoes with jalapenos instead of chilies, and added 3 cloves minced garlic. Since my husband and I like spicy food, I doubled the amount of chili powder. It was wonderful! The sweetness of the cornbread mixed with the spice of the 'pie' was a nice blend. I definitely needed the sour cream to cool down the heat, while my husband was adding hot sauce to spice it up, lol. This recipe will definitely be made many more times in our house!!! Thanks TOH!
