Slow Cooker Chicken Stew Recipe

Ingredients

  • 2-1/4 pounds bone-in chicken thighs, skin removed
  • 1 large onion, chopped
  • 2 medium carrots, sliced
  • 3/4 cup unsweetened apple juice
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pepper
  • 1 cup chopped dried apricots
  • Hot cooked couscous

Directions

  • Place the chicken, onion and carrots in a 3- or 4-qt. slow cooker coated with cooking spray. In a small bowl, combine the apple juice, garlic, salt, cinnamon and pepper; pour over vegetables.
  • Cover and cook on low for 6-8 hours or until chicken is tender.
  • Remove chicken from slow cooker; shred meat with two forks. Skim fat from cooking juices; stir in apricots. Return shredded chicken to slow cooker; heat though. Serve with couscous. Yield: 6 servings.

Nutritional Facts 1-1/3 cups (calculated without couscous) equals 279 calories, 10 g fat (3 g saturated fat), 87 mg cholesterol, 497 mg sodium, 23 g carbohydrate, 3 g fiber, 25 g protein. Diabetic Exchanges: 3 lean meat, 1 vegetable, 1 fruit.

I have made this recipe for my family MANY times since I found it! It's economical to make with the chicken thighs - I had never cooked with them before and thought I might not like them, I was sooo wrong! It's delicious and my boys (13 & 16) get excited when they come home from school and find this dish in the crockpot. It's also diet-friendly, low-calorie and satisfying. We love this crock-pot meal!

Great recipe!! I've made it a few times and served over brown rice:) I agree that it needs a bit of extra seasoning so I just add a bit of "this and that"...so delicious on a cold day; also freezes well. Yum!!

This was very good. I added a can of diced tomatoes to add a little more color. I also added the 1/4 tsp of unsweetened cocoa powder as someone suggested. The apricots give this dish a very good flavor. Will definitely make again.

This was good. I liked it, my kids liked it. Not a favorite but will definitely make again. It's healthy and easy, and a bit different from the average slow cooker chicken. I like the apple and cinnamon taste--nice for fall.

I've made this a few times and enjoyed it. The last time however, my entire family got sick after eating, so while I would make it again, I was asked not to. But I still hand it out to people who want a quick, easy crockpot meal. And, the apricots are something you shouldn't skip!

I added a bit of poultry seasoning (Bell's Seasoning), and it was very good. I made Bisquick biscuits to serve alongside, and it was a good dinner.

It was nothing too special, but it tasted good and was easy, so I'd make it again. I had it over both couscous and rice at different times, and definitely preferred the couscous. Toasted almonds on top also added a great texture to the dish.

Being on a budget, I thought I would try this out, and make some revisions with what I had handy. I used apple cider instead of apple juice, some marjoram for added flavor (just a dash or two), chicken tenderloins instead of thighs, added an extra garlic clove and some celery. I also let the chicken simmer in chicken broth before adding it to the crockpot. After about 4 hours of cooking I felt like the stew didn't have enough flavor, and I had the random thought to add about 1/4 tsp of unsweetened cocoa powder. Wow, what a difference! If you are worried about it not having enough flavor, try the cocoa, and do not skip the apricots. I served it with rice, and my toddler gobbled it up. :)
