Slow Cooker Chicken Dinner Recipe

Ingredients

  • 6 medium red potatoes, cut into chunks
  • 4 medium carrots, cut into 1/2-inch pieces
  • 4 boneless skinless chicken breast halves
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1/8 teaspoon garlic salt
  • 2 to 4 tablespoons mashed potato flakes, optional

Directions

  • Place potatoes and carrots in a 5-qt. slow cooker. Top with chicken. Combine soups and garlic salt; pour over chicken.
  • Cover and cook on low for 8 hours or until meat and vegetables are tender. To thicken, stir potato flakes into the gravy and cook 30 minutes longer, if desired. Yield: 4 servings.

To us this recipe tasted a lot like a chicken stew. I did alter the recipe a bit by adding an extra can of cream of chicken and a pkg of onion soup mix. I wouldn't say this is an out of this world dish, but good enough for a night that I don't have time to cook and need something ready when I come home.

This was excellent! I did add an extra can of cream of chicken soup because we like extra gravy! My guests love it! Will make again!

This recipe is a keeper! I did add a bit more seasoning to suit my taste. I didn't need the potato flakes. I paired it up with a couple other TOH favorites... Dad's Favorite Salad and Cran-Apple Salad. YUM!

We found it a bit bland, and will add onions and pepper next time. Maybe an envelope of onion soup mix, too.

I added 1/2 teaspoon of dried thyme and poultry seasoning to this recipe to make it more like chicken pot then served it in bowls with a homemade biscuit on top....yummy!
