Slow-Cooker Berry Cobbler Recipe

Ingredients

  • 1-1/4 cups all-purpose flour, divided
  • 2 tablespoons plus 1 cup sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 egg, lightly beaten
  • 1/4 cup fat-free milk
  • 2 tablespoons canola oil
  • 1/8 teaspoon salt
  • 2 cups fresh or frozen raspberries, thawed
  • 2 cups fresh or frozen blueberries, thawed
  • Low-fat vanilla frozen yogurt, optional

Directions

  • In a large bowl, combine 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. Combine the egg, milk and oil; stir into dry ingredients just until moistened (batter will be thick). Spread batter evenly into a 5-qt. slow cooker coated with cooking spray.
  • In a large bowl, combine the salt and remaining flour and sugar; add berries and toss to coat. Spread over batter.
  • Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into cobbler comes out clean. Serve with frozen yogurt if desired. Yield: 8 servings.

Nutritional Facts 1 serving (calculated without frozen yogurt) equals 250 calories, 4 g fat (trace saturated fat), 27 mg cholesterol, 142 mg sodium, 51 g carbohydrate, 4 g fiber, 3 g protein.

I made this fabulous recipe for a late evening snack. Everyone gobbled it up. All I had was a mix of fress blackberries and frozen blackberries. I only used 2/3 cup of sugar and it was certainly sweet enough for us.

Maybe the bad review came from someone who used too much sugar which can be grainy if it doesn't dissolve.

I can't believe how easy this was! I always have frozen berries on hand so this will be made often. Very yummy!!

The biscuit portion was a bit dry, overcooked. Next time I will test the cobbler after 1-1/2 hours.

I had a house full of teenagers working on a science project and they had to smell this simmering in the crockpot for 2 hours! I must admit, it didn't seem like it was going to be so great. Lots of juice and was there really a crust baking somewhere underneath there? Truth be told -- it's to die for warm or cold. The underlying biscuit does exist in there and is just the right amount for the berries in the recipe. The kids raved about it and I was thoroughly impressed myself. You can have fun and use whatever berries are in season, fresh or frozen, it's all good!

Made according to directions, but added black berries as well. This turned out excellent. Wife and son even said it was better than Carrabbas.

This is an amazing cobbler recipe!! I hardly bake and it was very simple. I used frozen blueberries, strawberries, and mixed berries, and it turned out great! Was a definite hit at dinner with friends. I served it with vanilla ice cream, and the hot/cold mix was awesome!! I will definitely make this again!!!

the recipe in the book I bought didnt have the amount of berries and what kind. I had to look it up on the website to get the full recipe. cant wait to make it

Not sure what happened - I followed the recipe as written but this just didn't appeal to our family. The fruit mixture was very tart tasting and the crust part had an odd texture to it. Just wasn't our thing.
