Slow-Cooked Pepper Steak Recipe

Ingredients

  • 1-1/2 pounds beef top round steak
  • 2 tablespoons canola oil
  • 1 cup chopped onion
  • 1/4 cup reduced-sodium soy sauce
  • 1 garlic clove, minced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 large green pepper, cut into strips
  • 1 tablespoon cornstarch
  • 1/2 cup cold water
  • Hot cooked noodles or rice

Directions

  • Cut beef into 3-in. x 1-in. strips. In a large skillet, brown beef in oil. Transfer to a 3-qt. slow cooker. Combine the onion, soy sauce, garlic, sugar, salt, ginger and pepper; pour over beef. Cover and cook on low for 5-6 hours or until meat is tender. Add tomatoes and green pepper; cook on low 1 hour longer or until vegetables are tender.
  • Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Cover and cook on high for 20-30 minutes until thickened. Serve with noodles or rice. Yield: 6 servings.

it tasted great and i will definitely make it again. i have shared it once already to me it seemed to not have an adequate amount of liquids for cooking 5 - 6 hours. i doubled the liquid ingredients.

This is a family favorite! It used to be one of our "special" meals, but now my young son loves it and requests it often. I usually double the ingredients for the marinade, and it helps it to remain moist.

So good! Even my picky-eater kids loved it. Didn't have time for slow-cooker, so made on stove top and used stew meat. Still excellent! We like it with rice.

Tried this for my brother who remembered my mom made this when we were growing up. IT WAS ABSOLUTELY DELICIOUS. He and I plus three of our friends were all raving about how good it was. WILL DEFINITELY MAKE AGAIN!!!

This is the best recipe ever. My son is a very picky eater and he loves this. We put it over mashed potatoes and add veggies. It's quick and fast.

I omitted the salt since soy sauce is salty. I also added one can of beef broth to make it less dry. Stewed tomatoes work well too. Other than that, its perfect! I have this written in my keeper cookbook and have made it many times over the years. Love it!!
