Slow-Cooked Meatball Stew Recipe

Ingredients

  • 3 medium potatoes, peeled and cut into 1/2-inch cubes
  • 1 pound fresh baby carrots, quartered
  • 1 large onion, chopped
  • 3 celery ribs, sliced
  • 1 package (12 ounces) frozen fully cooked homestyle meatballs
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 can (10-1/2 ounces) beef gravy
  • 1 cup water
  • 1 envelope onion soup mix
  • 2 teaspoons beef bouillon granules

Directions

  • Place the potatoes, carrots, onion, celery and meatballs in a 5-qt. slow cooker. In a small bowl, combine the remaining ingredients. Pour over meatball mixture.
  • Cover and cook on low for 9-10 hours or until the vegetables are crisp-tender. Yield: 6 servings.

Nutritional Facts 1 serving (1 cup) equals 291 calories, 8 g fat (3 g saturated fat), 51 mg cholesterol, 1,400 mg sodium, 41 g carbohydrate, 4 g fiber, 14 g protein.

this has become a family favorite. I changed it to use 2 pkgs onion soup mix and omitted the beef bouillon. Has more flavor that way. But a great recipe!

I was looking for an easy recipe for our busy Monday's that would appeal to everyone in the family. This was very tasty and was even better the next day as leftovers. My kids loved it as well. I will definitely make this one again.

Every place I bring this they love it. I cut the sodium done. I use stewed tomatoes, sodium free bouillon and the low sodium onion soup. I make my own meatballs & I keep them in the freezer, and they don't have the additives as in the boughten ones. Mine is 720mg sodium. I make a 8 qt cooker and fiqure it serves at least 12 so it is 60 mg a person.

There is way too much sodium in this recipe. i would have to figure out a way to cut this down considerably.

I have been making this recipe for years and my family loves it. I always add more than the called for meatballs so everyone has plenty. This is a great cold weather recipe - it warms everyone up after a cold day.
