So easy, fast and delicious! I added fresh chopped tomatoes and skipped the cheese. It's so good you won't miss the extra calories!

This was a yummy, easy, quick soup. I omitted the chips and added 1/4 tsp. chili powder and 1/4 tsp. cumin, and sprinkled chopped fresh cilantro immediately before serving. For more color, I added a cup of canned drained diced tomatoes. I skipped the 2 cups of cheese and instead only sprinkled a handful of cheese over each bowl immediately before serving. For us this was more like 3 dinner-sized servings (not 7 servings).

Did I say this was a great soup, I'm saying it again! Tried another tortilla soup and wasn't thrilled, plus it took way more time to make than this recipe. Love it, love it, love it!
