Ingredients

  • 1/2 pound lean ground beef (90% lean)
  • 1/2 pound lean ground turkey
  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1 can (8 ounces) no-salt-added tomato sauce
  • 1 cup cooked rice
  • 1 to 1-1/2 teaspoons chili powder
  • 3/4 cup shredded reduced-fat cheddar cheese

Directions

  • In a large skillet, cook beef, turkey, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in tomato sauce, rice and chili powder. Cook for 10 minutes; sprinkle with the cheese. Cover and cook for 2 minutes or until cheese is melted. Yield: 4 servings.

Nutritional Analysis: One serving equals 268 calories, 8 g fat (3 g saturated fat), 43 mg cholesterol, 236 mg sodium, 16 g carbohydrate, 2 g fiber, 32 g protein. Diabetic Exchanges: 3 lean meat, 1 starch, 1 vegetable.
