Simple Turtle Cheesecake

Ingredients
- 1/2 cup semisweet chocolate chips
- 1/2 cup heavy whipping cream, divided
- 1 frozen New York-style cheesecake (30 ounces), thawed
- 3 tablespoons chopped pecans, toasted
- 1/4 cup butter, cubed
- 1/2 cup plus 2 tablespoons packed brown sugar
- 1 tablespoon light corn syrup
Directions
- Place chocolate chips in a small bowl. In a small saucepan, bring 1/4
- cup cream just to a boil. Pour over chips; whisk until smooth. Cool
- slightly, stirring occasionally. Pour over cheesecake. Sprinkle
- chopped pecans over top. Refrigerate until set.
- Melt butter in a small saucepan. Stir in brown sugar and corn syrup.
- Bring to a boil. Reduce heat; cook until sugar is dissolved, about 1
- minute. Stir in remaining cream and return to a boil. Remove from
- the heat. Serve with cheesecake. Yield: 8 servings.
