Simple Roasted Pepper Tortellini Recipe

Ingredients

  • 1 package refrigerated cheese tortellini
  • 1 pound bulk Johnsonville® Ground Sausage
  • 1/2 cup chopped onion
  • 2 jars roasted sweet red peppers, drained
  • 1 can pizza sauce
  • Shredded part-skim mozzarella cheese

Directions

  • Cook 1 pkg. (20 oz.) refrigerated cheese tortellini to package directions. Cook 1 lb. bulk Italian sausage and 1/2 cup chopped onion in a large skillet over medium heat until meat is no longer pink; drain. Process 2 jars (7 oz. each) roasted sweet red peppers, drained, in a food processor until smooth. Add the peppers, 1 can (15 oz.) pizza sauce, and drained tortellini to the skillet; stir and heat through. Sprinkle with mozzarella cheese. Yield: 6 servings.

This was good, but a bit boring. Really didn't have much zip. Easy to make.
